Recipe: Burger with beetroot patties and truffle mayo
Ingredients:
200g beetroot, fresh and raw
80g quinoa
50g quick oats
1 EL potato starch
1 garlic glove
1 EL tomato puree
1 EL thyme, dried
2 EL peanut oil
salt and pepper

Filling
truffle mayo, salad, tomatoes, avocado, roasted onions – everything you like
Preparation:
– Wash, peel and zest the beetroot. After that squeeze it good and let it drip off.
– Put the quinoa in a strainer, wash it, the cook it according to the instructions on the package. Once it’s cooked, let it cool down.
– Now, finely chop the garlic clove.
– After that, blend the dripped off beetroot with the other ingredients and add some seasoning.
– As soon as you get a pastry out of the ingredients, start to form four patties. Then roast them gently for four minutes on each side.
– Cut the buns in half, spread it with truffle mayo and top it with everything you like.
